Bittergourd has long been an important vegetable in Asian cuisine. It is green when young, turning yellowish-green when matured. The flesh is green, white, or yellow with a bitter taste. The vegetable can be used for preparing soups or stir-fried dishes. Its leaves can be used with most vegetables to make vegetarian soups with a nice aroma and flavor. Bittergourd is also rich in fiber, vitamins (A, B1, B2), minerals (calcium, phosphorus) and contains no preservatives, additives, or coloring ingredients
